I love miso soup, especially since I found a recipe that is easy for me to make it at home. 
Ingredients:
4 cups of water
2 tsp. dashi granules – these can be difficult to find, but I got my at an Asian grocery store
6 oz./ 175g tofu
4 shitake or white mushrooms
4 tbsp. miso paste
2 scallions
Directions:
  1. Put the water in a large pot with the dashi granules and bring to a boil.
  2. Add tofu and mushrooms, reduce heat and let simmer for 3 minutes.
  3. Stir in the miso paste and let simmer gently, string until has dissolved. Only takes about a minute. 
  4. Add scallions and serve immediately.
*If I am not serving immediately, I don’t add the scallions until serving time.
**Miso paste will begin to settle, so stir the soup before serving to recombine
